
Ingredients
Bhaji
3 Medium Carrots
1 Red Onion
50g Chopped Coriander
1 tsp Cumin Seed
½ tsp Ground Turmeric
½ tsp Coriander Seed
½ tsp Kashmiri Chilli Powder
100g Greek Style Coconut Yogurt
100g Gram Flour
Salt and Pepper to taste
Vegetable Oil for frying
Raita
3 Carrot Tops (Washed and Finely Chopped)
1 Granny Smith Apple (Unpeeled and Finely Diced)
20g Mint Leaves (Finely Shredded)
1 Green Chilli (Deseeded and Finely Chopped)
1 Clove of Garlic (Finely Chopped)
50g Red Onion (Finely Diced)
150g Greek Style Coconut Yoghurt
Lemon Juice to taste
Salt and Pepper to taste
Method
Peel and grate the carrots and red onion, lightly season then squeeze to remove any excess water.
Toast the spices then combine in a bowl with the coconut yoghurt, chopped coriander and gram flour.
Pre-heat a fryer or pot of oil to 180c. Use two forks to form small bhajis straight into the hot oil, fry for 1 minute each side, remove from oil and season.
Combine all the raita ingredients and season with lemon juice, salt and cracked black pepper.
Serve the bhajis hot alongside the chilled raita and enjoy!
