Red Mullet with Lemon & Herb Courgetti and Olive Tapenade

Ingredients

„

2 x Red Mullet Fillets ( Skin on / Pin boned )

1 x Yellow Courgette / 1 x Green Courgette

Good Black Olives ( Kalamata ) few Capers , Clove Garlic & a few anchovies

Good Olive oil / seasoning


Method
  1. Prepare your Courgetti using a spiralizer , To cook Sauté in a little oil with fresh herbs & finish with a squeeze of lemon.

  2. Save a few olives to decorate the plate , blitz the rest with the anchovies , Capers , Garlic & Olive oil

  3. Dust your fillets in a little flour and pan fry skin side down until crispy , turn over & cook for a few more minutes

  4. Plate & Serve

  5. Note : Add Sauté cubes of Chorizo or some Hollandaise for a little twist !


Chefs Note: Ask your fishmonger to prepare Your Fish for you (Filleted and Pin boned)
